Summertime Recipes

I have had a few requests for some recipes I mentioned in my posts. This Blueberry Cobbler has to be one of our favorites. It is sooo good and usually lasts less than one hour after I take it out of the oven.

Best Blueberry Cobbler
2 1/2 cups fresh or frozen blueberries
1/2 lemon, juiced
2 tsp vanilla
1 cup sugar, or to taste
1 tsp flour
1 Tablespoon butter, melted
1 3/4 cup flour
4 tsp baking powder
6 Tablespoon sugar
5 Tablespooon butter, softened
1 cup milk
cinnamon
2-3 tsp sugar

Lightly grease 8x8 or I used 7x10 baking dish. Place berries in dish and mix with vanilla and lemon juice. Sprinkle with 1 cup of sugar (I used 3/4 cup) and 1 tsp of flour, then stir in the tablespoon of melted butter. Set aside.

In a medium blowl, stir 1 3/4 cup flour, baking powder and 6 T sugar. Add 5 T of butter until in small pieces. Quickly stir in milk. Mix just until moistened. You should have thick batter or very wet dough. Cover and let rest for 10 minutes.

Preheat oven to 375. Spoon batter over berries, leaving holes for berries to peek through. Mix some cinnamon and sugar together, Sprinkle over top.

Bake for approx 25 minutes. Top should be golden brown. Check to see if batter is done.

The last time I made this, I added 2 sliced peaches in with the blueberries...Awesome!


Zuchinni/Squash Casserole

1 14 oz can diced tomatoes with or w/out chiles, Drained
1 6 oz can of tomato paste
2-3 T of sugar
Cayenne powder
Zuchinni 1/2 to 1 medium peeled and sliced
Squash 1 medium peeled and sliced
1 Large onion, sliced
Mozzarella cheese

Drain partially the diced tomatoes and mix with tomato paste in large bowl. Add sugar and cayenne to taste. (we like spicy...you wouldn't have to add cayenne at all). Add sliced zuchinni, squash and onion. Stir until it is all coated with tomatoey sauce. Pour into baking dish and bake at 375 for 30-40 minutes. Add Mozzarella cheese last 5 minutes in oven.

I have also added 1 lb of ground beef, cooked and drained, to this recipe for more of a main dish.
